How would you answer an interview question on why you want to be a nurse?

Be honest. You wanted to go to nursing school and work as a nurse for a reason. This will make your answer unique to you. Interviewers know a generic or fake answer when they hear one after listening to so many people. I truly don't believe people become nurses only for the money or a superficial reason, because the stress that comes with the job doesn't compare. You'd make more money in IT instead with less stress. You'd also burn out real quick if you didn't love even one aspect of nursing. So this is your opportunity to tell your story and make them want to have someone like you working at their company. Its similar to the question "tell me about yourself".
